I know, it’s hard to believe that truffles could really be this easy. But you’ll be amazed by how soft and caramel-y these taste. Growing up, I was a big fan of Rolos. It was one of my favorite candies. There was just something about that caramel center that hooked me. I was on a mission to make a much healthier version then got inspired by all the green going around for Saint Patrick’s Day.
Raw vegan matcha caramel truffles
Here’s a green treat for you that’s raw, vegan, gluten-free, refined sugar-free, and made with only 3 ingredients: matcha caramel truffles. I always try to work healthy greens into my daily routine, so today is no exception. These treats are completely all-natural and taste delicious right out of the freezer.

 One cup Piarom dates, pitted
 1 tbsp almond butter
 Matcha powder for rolling

Process the dates in a food processor until a sticky paste forms.

Add the almond butter and process until combined. The mixture will be really sticky, which is good!

Scoop the caramel into a bowl and freeze, uncovered, for 10 minutes.

Shape the caramel into small balls and roll them in the matcha powder.

Place in the freezer to chill. Enjoy!
