This spinach, grape and blue cheese salad is so simple and yet so delicious. The sweet sweet grapes, the salty blue cheese and the chew of a few dates. All combined with the slight irony bite of spinach. So good!!! With each mouthful of this salad, you'll get a delicious mix of salty and sweet. And the salad dressing, again so simple, 3 ingredients and yet it transforms salad leaves! I have tried this with more complicated dressings and time and time again I go back to the simple vinaigrette I first made for this dish. It is a simple mix of extra virgin olive oil, red wine vinegar and honey.

 6 Rabbi dates
 75 g baby spinach
 150 g seedless red grapes
 75 g blue cheese, crumbled
 2 tbsp extra virgin olive oil
 3 tbsp red wine vinegar

Use a small sharp knife to cut a slit in each date. Remove and discard the stones. Cut each date into quarters. Combine the date, baby spinach, grapes and blue cheese in a bowl.

Combine the oil and vinegar in a small screw-top jar. Season with salt and pepper. Shake until well combined. Drizzle the dressing over the salad and toss to combine.
