These flourless chocolate cookies are rich, chocolaty, chewy on the inside and slightly crispy around the edges. They taste just like brownies. You won’t believe how easy it is to make them. They come together in a food processor and you probably have all the ingredients on hand. The best part? They have no flour and no added fat. If you need the cookies to be gluten-free, check the packaging of the cocoa to make sure it is gluten-free.

110 g raw cashews or roasted cashews
 110 g macadamias
 30 g sesame seeds
 225 g Mazafati dates, pitted
1 ½ tbsp raw cacao powder

Preheat oven to 170C/150C fan forced. Line 2 baking trays with baking paper. Place all ingredients in a food processor and process for 1 minute or until the nuts are finely chopped and the mixture is well combined and smooth.

Roll 2 teaspoonfuls of mixture into a ball. Place on prepared tray. Repeat with the remaining mixture to make about 30 balls. Use a fork to flatten slightly. Bake for 10-12 minutes until lightly coloured (biscuits will still be soft). Cool on trays for 5-10 minutes. Transfer to a wire rack to cool completely.
