This parfait with date paste is super easy to make and tastes like something you would get at a fancy restaurant. It is full of protein and sweetened only with dates! Ok, so I am really getting into the healthy dessert thing. First, they are so easy to make. And second, they are delicious. That’s a win win in my book! This creation came about when I was really craving something smooth and silky, but quick. I had some cashews that I was soaking, so I “borrowed” a few to play around with. Well, my playing around led to this delicious dessert that my boys won’t stop asking for!

 One cup macademia nuts, soaked overnight
 One cup cashews, soaked overnight
 ½ cup peanut butter
 10 Piarom dates
 1 ½ cups almond milk
 For chocolate cream:
 1 tbsp date paste
 2 tbsp cocoa powder
 One cup coconut milk or coconut cream

Use a food processor and mix all the main ingredients until nuts and dates are chopped well.

Add milk to this mixture slowly and continue blending until you get thick and moving consistency.

Layer this mixture in cups. Make sure the cup is big enough to have room for chocolate cream.

Mix the ingredients for chocolate cream and put it over the layers.
