Plus, if you replace all of the sugar with nutritionally-dense date paste, you can even claim that your cake is (kind of) healthy, too! Date paste is a paste made from fresh dates. It has a sweet taste reminiscent of brown sugar, so it is perfect as a white or brown sugar replacement. Date paste is an all-natural sweetener, so it’s better than most alternative sweeteners which are often made with unnatural ingredients or processing or chemicals. This cake is not very involved it’s a great one to let the kids help with!

OR, if you’re nervous about whether it will change the taste or the texture of your recipe, start with replacing 1/2 (or even 1/3) of the sugar with date paste. Some are always going to be better than none! Date paste is an all-natural sweetener, so it’s better than most alternative sweeteners which are often made with unnatural ingredients or processing or chemicals.

 For cupcake:
 1 ½ cups date paste
 1 cup sorghum flour
 ¼ cup potato starch
 ¼ cup tapioca flour
 1 cup coconut milk
 ¾ cup coconut butter
 1 ½ tsp baking soda
 ½ tsp salt
 1 tbsp vanilla extract
 3 ounces dark chocolate
 Frosting:
 ½ cup and 2 tablespoons date paste
 ½ cup coconut milk
 ½ cup coconut butter
 1 tsp salt

Use a large bowl and combine flours, baking soda, and salt.

In another bowl, melt the dark chocolate and mix it with coconut butter. You can use the microwave for 30 seconds to melt the chocolate. Check to see if the chocolate has been melted enough. You may need to put it in the microwave for another 10 seconds. Don’t rush this step, you may burn the chocolate if you heat it more than it needs.

Add the melted chocolate and date paste to the first bowl and whip with a hand mixer or a food processor. Add vanilla extract and continue mixing.

Put the baking cups in muffin tins and place large spoonfuls of the batter into them.

Preheat the oven to 350 F for 5 minutes. Then, bake the cakes for 20 minutes. Check after 15 minutes to make sure the cakes are ready and prevent them from burning.

Remove the cakes from the oven and leave them at room temperature to cool. It may take an hour. Now you have time to make the frosting.

Mix all the ingredients of frosting in a large bowl with a hand mixer or a food processor. Keep whipping until it gets light and fluffy.

You can decorate the cakes with this cream. The chocolate cake is ready.
